Whole grains contain over 30 vitamins and minerals. The only way to get all of the nutritional value from whole grains is to mill whole grains and use the flour right away. The oils in whole grains become rancid very quickly once they are milled. Because of this, it is very important to use freshly-milled whole grain flour right away or store it in the freezer for later. When using flour from the freezer, let it come to room temperature first before using it to make your bread.
